Recently I bought a 1 kg packet of peeled tapioca which was vacuum packed from NTUC. Then I recalled that I had a recipe book on cakes and I found the baked tapioca cake recipe in it.
With 500 g of tapioca left, adjustments had to be made to the recipe's ingredients. I did not follow all the steps required but the tapioca cake turned out well.
Ingredients that I used were:
500 g tapioca
110 g white sugar
200 ml coconut cream (I used Kara brand)
1 egg beaten
pinch of salt
30 ml water
Steps:
1. Cut the tapioca into smaller pieces and put inside a food blender to grind them,
2. Combine the grounded tapioca with the coconut cream, white sugar, egg and salt. Mix well.
3. Brush the inside of the baking tray with vegetable oil. Pour the tapioca cake mixture into the baking tray.
4. Put the baking tray into a preheated oven at 200 degree celsius for about 60 minutes or until golden brown.
5. Wait till it had cool down before cutting the cake into smaller pieces
